Why cooked rice needs quick cooling

Uncooked rice can carry spores of Bacillus cereus. Cooking may not destroy every spore. When rice remains warm for too long, surviving spores can grow and some strains may produce toxins. The rice can still look and smell normal, which is why “it smells fine” is not a dependable safety test.

The safest way to cool cooked rice at home

Do not place a large, tightly covered pot of steaming rice in the refrigerator. Its center can remain warm even while the outer layer cools. The problem is the depth and mass, not the fact that the food enters the refrigerator warm.
